The veal shank with bone represents the lower part of the thigh and shoulder. Suggestions for ways of preparation and serving:
- Since shank is a medium tough meat, it must be boiled, stewed or baked in broth for a long time, and then it becomes a real culinary delicacy.
- Suitable spices for the preparation of beef shank are black pepper, garlic, parsley, oregano, sage, marjoram.
- Shank is the most suitable meat for cooking beef, for roasting on a low heat in a pot, as well as for the Italian dish Ossobuco.
