Sachanli dry sausage
We prepare this organic raw-dried delicacy from hand-skimmed and decapitated beef from ham and shoulder, seasoned with salt, organic sugar, a special mix of organic spices and fennel (wild dill).
How do we give the unique taste of the Sachanli sausage:
- We grind the meat into large and small pieces and fill it in natural casings.
- Put the sausage in an oven at a special temperature and humidity between 25 - 30 days. These conditions contribute to the development of noble mold, which gives the delicacy its characteristic aroma.
- In addition to the main spices, we add an interesting and different spice, used by our ancestors - fennel, better known as wild dill. The sausage is called Sachanli from the village of Sachanli of our ancestors in White Sea Thrace.
